Personally, I have never been one to go on a particular diet but I recently started looking at different diet types to see if there were increased health benefits and really kickstart feeling healthy and transform my life. I wasn’t getting out of this lockdown without a new positive change in me.
I have heard a lot about keto and low carb diets. Through intermittent fasting, I’ve learnt about ketosis. This is when your body does not have enough carbohydrates to burn for energy so it instead burns fat to energy making ketones.
Therefore, the keto diet is recommended for weight loss and even Type 2 diabetes/insulin resistance. Keto can help with insulin resistance because by lowering carb consumption, blood sugars don’t spike as dramatically thus decreasing the need for insulin.
Again, I personally don’t go on diets and wouldn’t suggest this diet for everyone (we all have different bodies, food intolerances, etc) but I have really started to see benefits with the keto/low carb diet without drastically changing what I already eat. The biggest change I noticed was how my energy levels were maintained (I often found myself crashing throughout the day and was constantly tired) and knowing how important and wonderful it was to be in tune with my body.
I also love how I did not have to drastically restrict on food consumption and was still able to snack throughout the day without consuming plenty of calories. I especially love how no cooking was involved meaning that I can whip these keto low carb snacks at any time of the night without mess.
1 Strawberries and other berries
Simple yet delicious. Strawberries are low in carb and high in fibre. Another thing I love about all berries is they are filled with antioxidant and ant-inflammatory properties. Strawberries even have as much vitamin C than oranges. Strawberries for the win!
2 Berries with greek yoghurt
I also love adding berries into my greek yoghurt with a little drizzle of honey. Feel free to add granola as well for a perfect quick and simple breakfast.
Good news! Cheese is acceptable under moderation. I don’t know what I would do without cheese. I recently have been enjoying these cute Cheese Stringers from Bega. They remind me of my childhood and are fun to eat (which is what food is all about). I also find it easier to restrict my cheese intake as I just eat one cheese stringer at a time.
The only downside is I find cheese stringers a bit expensive.
4 Charcuterie board
Cheese and cured meats go wonderfully together. I love having a bit of brie cheese with my salami and prosciutto. This would be a fantastic keto snack for a group of people and perfect for meal prepping.
5 Vegetables and dip
I love dipping sliced carrots into hummus. I also really like dipping cucumber and celery in tzatziki. The options are endless.
6 Smoked salmon, cream cheese cucumber bites
This is my favourite snack and I have shared this with my family and they love it. I never knew cucumber and cream cheese would work so well together. Top with smoked salmon and dill and you will keep going back to seconds. With one cucumber I was able to make at least 20 servings so a little goes a long way.
Keto low carb snacks can be delicious! Something I find that helps with sticking to a diet is instead of finding out what you can’t eat, find out what you can. You are definitely more likely to stick to a diet if you can enjoy it than worry about its restrictions.
