Avocado and poached eggs never fail me. It’s breakfast comfort food. This is a simple recipe that only takes a few minutes to cook. It’s a great, easy breakfast to start your day right! It’s only logical to serve a coffee on the side. I still need to practise making that perfect poached egg with all that perfect gooeyness oozing out. You can make your eggs however you like from sunny side up to even scrambled.
Poached Egg And Avocado Toast

1 avocado (ripe)
4 pieces of bread
optional: vinegar (for poaching eggs)
Step 1 Cook your eggs however you like. I actually cooked my poached eggs by using a microwave. I find the traditional method of creating a whirlpool in the boiling water with your egg is a little difficult (which I will eventually master). Vinegar helps but I like this microwave trick. I think it’s an easier method to poached eggs especially for beginners.

Step 2 Toast the bread.
Step 3 Smash the avocado and season with salt and pepper.
Step 4 Optional: Cut the halloumi into 1cm slices and fry in a saucepan for 1-2 minutes. Turn the crispy brown side over and cook the other side for another 1-2 minutes.
Step 5 Top the toast with avocado and a poached egg. Season with salt and pepper. Add halloumi if desired.
Tip: Halloumi is quite salty. To reduce the saltiness, I recommend soaking the halloumi in water before frying. This will soften the cheese and take out the salt.
I actually used a sandwich press instead of a toaster because I’ve been making a lot of ham and cheese toasties recently and completely forgot we had a toaster. It still tasted delicious though as you can’t go wrong with eggs and avocado. If only if I had the perfect poached runny egg, this dish would be so elevated.
